Why Turkey Works So Well on a Low FODMAP Diet
Turkey meat contains no FODMAPs at all. Like chicken, beef and fish, plain unprocessed meat is protein and fat, and FODMAPs are carbohydrates - so there is nothing for your gut bacteria to ferment. That makes turkey one of the safest centrepieces you can build an IBS dinner around.

Method: The Master Herb Turkey Breast
- Take the chill off. Leave the turkey breast on the counter for 20 minutes. Cold meat straight from the fridge cooks unevenly and dries out at the edges before the middle is done.
- Make the rub. Mix the garlic-infused oil, salt, pepper, thyme, rosemary, smoked paprika and lemon zest in a small bowl into a loose paste.
- Coat it. Pat the turkey completely dry with paper towel, then rub the paste over the whole surface, pushing a little under the skin if the breast has skin on.
- Sear. Heat an oven-safe skillet over medium-high. Sear the breast skin-side down for 4 minutes until golden, then flip.
- Add the vegetables. Scatter the carrot batons and green beans around the turkey, pour in the stock, and transfer the pan to a 190C / 375F oven.
- Roast 25-30 minutes, until the thickest part reads 74C / 165F on an instant-read thermometer. This number is not negotiable for poultry.
- Rest 10 minutes on a board, loosely tented with foil. Resting is what keeps the juices in the meat instead of on your cutting board.
- Finish. Slice across the grain in 1 cm slices, spoon the pan juices over, and scatter the spring onion greens.
